Sixteen years ago I was told that I was slowing poisoning myself by ingesting gluten. Yes, it was 2001 when I was diagnosed with Celiac Disease and went cold turkey on the gluten intake. Rice as a carb became a dietary staple. Using rice flour as a key ingredient in all my baked goods became a survival technique. So, recent reports of a study linking the gluten-free diet with increased exposure to arsenic and mercury found in rice and rice-based products has me a bit rattled.
I’m sure I’m not the only Celiac who feels this way. Looks like we’ll be going heavier on the fresh fruits, veggies and meats, and less on rice and other gluten-free rice-based foods like pasta and pastries 🙁
